Chitosanase

This product is a specific enzyme preparation newly developed by our company using biological engineering technology. Compared with other chitosan degradation methods, it has the advantages of no side reactions, mild degradation conditions, and easy control of the degradation process and molecular weight distribution of degradation products. The enzymatic hydrolysis products have high activity and purity.

I. Preparation of Chitosan Solution

Dissolve chitosan raw materials in a 3%-5% acetic acid solution to prepare a 10% chitosan solution.

Temperature: 45℃ pH: pH5.5-6

During the enzymatic hydrolysis reaction, slow stirring should be maintained to keep the internal temperature of the container uniform at 45℃. High-speed stirring should be avoided to prevent enzyme inactivation.

III. Enzyme Activity Specifications and Precautions

1. The activity unit of this enzyme preparation is defined by the amount of substrate reduction per unit time.

2. Enzyme activity definition: Under the conditions of 45℃ and pH 5.5-6, the amount of enzyme required to convert 1 milligram of chitosan into water-soluble components per minute is defined as one activity unit.

3. The raw material for preparing chito-oligosaccharides by enzymatic hydrolysis is chitosan. The molecular weight (viscosity) and degree of deacetylation of chitosan have a great influence on the enzymatic hydrolysis reaction. The same enzyme preparation will show different enzyme activity when using different chitosans as substrates. Therefore, when using this enzyme preparation, it is best to determine the enzyme activity using the chitosan raw materials to be used, in order to calculate the amount of enzyme preparation to be used.
